Ingredients

– 320 g spaghetti or similar pasta
– 5 ml salt
– 80 g Pecorino cheese, grated
– 40 g Parmesan cheese, grated
– 15 ml fresh black pepper
– 500 ml pasta water (reserved from cooking pasta)
– 50 ml extra virgin olive oil

Method

1. Begin by boiling a large pot of water. Add salt once the water is bubbling.
2. Add the pasta into the boiling water and cook until it’s al dente, following the package instructions.
3. While the pasta cooks, combine the grated Pecorino and Parmesan cheese in a bowl. Mix in the black pepper.
4. Once pasta is done, reserve some pasta water and drain the rest.
5. Quickly add the hot pasta to the cheese mix along with olive oil. Stir and add reserved water gradually until you get a smooth, creamy sauce.
