Ingredients

– 1 cup lentils
– 2 cups water
– 2 tablespoons vegetable oil
– 1 medium onion, chopped
– 2 garlic cloves, minced
– 1 red bell pepper, chopped
– 1 zucchini, chopped
– 2 cups fresh spinach
– 3 tablespoons soy sauce
– Salt and pepper to taste

Method

1. Rinse the lentils under cold water then combine them with water in a pot.
2. Bring the pot to a boil, then reduce the heat and simmer until the lentils are soft, around 20 minutes.
3. Meanwhile, heat the vegetable oil in a pan over medium heat. Add the onion and garlic, cooking until the onion is soft.
4. Stir in the red bell pepper, zucchini, and cooked lentils. Cook everything for an additional 5 minutes.
5. Add the fresh spinach, soy sauce, salt, and pepper. Mix everything together and let it cook until the spinach is wilted.
