Ingredients
– 500 g chicken breast, cut into bite-sized pieces
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 1 can (400 g) diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 200 ml chicken broth
– 2 cups cooked rice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and cook until soft, about 3 minutes.
3. Stir in garlic and bell pepper, cooking for another 2 minutes.
4. Add chicken pieces to the pan. Cook until browned and cooked through, around 5–7 minutes.
5. Pour in tomatoes, oregano, paprika, and chicken broth. Simmer for 10 minutes before serving over cooked rice.
