Ingredients

  • 2 cups quinoa
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (400g) black beans, rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method

  1. Rinse the quinoa under cold water using a fine strainer.
  2. In a large pot, bring 4 cups of water to a boil and add quinoa. Reduce the heat, cover, and simmer for about 15 minutes or until the water is absorbed.
  3. Heat olive oil in a frying pan over medium heat. Add the chopped onion and garlic. Sauté for about 3 minutes until soft.
  4. Add the red bell pepper to the pan. Continue cooking for another 5 minutes until the pepper is tender.
  5. Stir in the black beans, cumin, paprika, salt, and pepper. Mix well and heat for a few more minutes. Serve over the cooked quinoa.
