Ingredients
- 2 cups quinoa
- 4 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (400g) black beans, rinsed
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Method
- Rinse the quinoa under cold water using a fine strainer.
- In a large pot, bring 4 cups of water to a boil and add quinoa. Reduce the heat, cover, and simmer for about 15 minutes or until the water is absorbed.
- Heat olive oil in a frying pan over medium heat. Add the chopped onion and garlic. Sauté for about 3 minutes until soft.
- Add the red bell pepper to the pan. Continue cooking for another 5 minutes until the pepper is tender.
- Stir in the black beans, cumin, paprika, salt, and pepper. Mix well and heat for a few more minutes. Serve over the cooked quinoa.
