Ingredients
– 500g chicken breast, cut into chunks
– 2 tablespoons curry powder
– 400ml coconut milk
– 1 onion, diced
– 3 garlic cloves, minced
– 1 tablespoon ginger, grated
– 2 cups spinach, packed
– 1 tablespoon soy sauce
– 1 tablespoon olive oil
– Salt and pepper, to taste
Method
1. Heat the olive oil in a pan over medium heat. Add the onion and sauté for about 3 minutes until soft.
2. Stir in the garlic, ginger, and curry powder. Cook for 2 minutes until fragrant.
3. Place the chicken, coconut milk, and soy sauce in the slow cooker. Add the sautéed mixture and mix well.
4. Cover the cooker and set it on low for 6 hours or high for 3 hours. Season with salt and pepper.
5. Before serving, stir in the fresh spinach until wilted. Enjoy over rice or with bread.
