Ingredients
– 250 g pasta
– 500 g cherry tomatoes
– 2 cups fresh spinach
– 3 tablespoons olive oil
– 1 tablespoon garlic (minced)
– 1 teaspoon dried oregano
– Salt (to taste)
– Pepper (to taste)
– 50 g grated cheese (optional)
– 1 tablespoon balsamic vinegar
Method
1. Preheat the oven to 200°C.
2. Cut the cherry tomatoes in half and place them on a baking tray. Drizzle with olive oil, salt, pepper, and oregano.
3. Roast the tomatoes in the oven for about 20 minutes until they are soft and slightly caramelized.
4. While the tomatoes roast, cook the pasta according to the package instructions. Drain and set aside.
5. In a large bowl, combine the roasted tomatoes, cooked pasta, spinach, garlic, and balsamic vinegar. Mix gently and add cheese if desired.
