Ingredients
– 2 cups all-purpose flour
– 2 large eggs
– 1 teaspoon salt
– 1 tablespoon olive oil
– 1 cup ricotta cheese
– 1/2 cup grated cheese
– 2 cups spinach, chopped
– 1 teaspoon Italian herbs
– 4 cups water
– Salt, to taste
Method
1. Mix flour, salt, and olive oil in a bowl. Make a well in the center and add the eggs. Stir until a dough forms.
2. Knead the dough on a floured surface for about 5 minutes. Wrap it in plastic and let it rest for 30 minutes.
3. Roll the dough out thinly and cut it into squares. Put a little ricotta, spinach, and herb mixture in the center of each square.
4. Fold the squares into triangles and pinch the edges to seal. Shape them into tortellini by folding the ends together.
5. Boil water in a large pot and add salt. Cook the tortellini for about 5-7 minutes until they float. Drain and serve with sauce.
