Ingredients

– 2 cups of shallots
– 2 tablespoons of olive oil

– 1 teaspoon of black pepper
– 3 tablespoons of white wine vinegar
– 1 tablespoon of honey
– 1 teaspoon of fresh thyme (or ½ teaspoon dried)
– 1 tablespoon of chopped parsley
– ½ cup of vegetable broth

Method

1. Peel the shallots and slice them in half lengthwise.
2. Heat the olive oil and butter in a skillet over medium heat.
3. Add the shallots to the skillet along with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they are softened and lightly golden.
4. Pour in the white wine vinegar, honey, thyme, and vegetable broth. Stir well and allow the mixture to simmer for 5 to 7 minutes.
5. Once done, sprinkle with chopped parsley before serving.
