Ingredients
- 500 g broccoli
- 250 g broccoli rabe (rapini)
- 250 g broccolini
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon red chili flakes (optional)
- 1 tablespoon lemon juice
- Salt, to taste
- Pepper, to taste
- Grated parmesan cheese, for serving
Method
- First, wash and trim the broccoli, broccoli rabe, and broccolini. Cut them into manageable pieces.
- In a pot, boil water and add a pinch of salt. Cook the vegetables for about 3 to 4 minutes until they are bright green and tender.
- Drain the vegetables and place them in a bowl of ice water to stop the cooking process. This will help keep their color.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the drained vegetables to the skillet. Season with salt, pepper, lemon juice, and chili flakes if using. Toss everything together and serve with grated parmesan on top.
