Ingredients
– 500 g chicken breast, diced
– 1 cup broccoli florets
– 1 cup carrots, sliced
– 1 cup bell peppers, chopped
– 2 cloves garlic, minced
– 2 tbsp soy sauce
– 1 tbsp olive oil
– 1 tsp ginger, minced
– 300 ml chicken broth
– 2 cups cooked rice
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the garlic and ginger, cooking for about one minute until fragrant.
3. Stir in the chicken breast and cook until browned, roughly 5 minutes.
4. Combine the broccoli, carrots, and bell peppers. Cook everything for about 5 more minutes.
5. Pour in the chicken broth and soy sauce, then let it simmer for 10 minutes. Serve over cooked rice.
