Ingredients
– 2 tablespoons of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 2 cans (400g) of diced tomatoes
– 1 can (400g) of kidney beans, drained
– 1 can (400g) of corn, drained
– 2 tablespoons of chili powder
– Salt to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion is soft.
3. Stir in the diced red and green bell peppers. Cook for another 5 minutes.
4. Mix in the diced tomatoes, kidney beans, corn, chili powder, and salt.
5. Let everything simmer for 20 minutes, stirring occasionally.
