Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the minced garlic and mixed vegetables, cooking for about 5 minutes until they soften.
3. Stir in the oregano, salt, and black pepper. Continue cooking for another 3 to 4 minutes.
4. Remove the pan from heat. Add the lemon juice and cheese if using, then mix everything well.
5. Serve the vegetable mix over cooked rice or quinoa, garnishing with fresh parsley if desired.
