Ingredients
– 1 cup cherry tomatoes, halved
– 1 cup cucumber, diced
– 1 cup bell pepper, diced
– 1 cup olives, pitted and sliced
– 1 small red onion, diced
– 200 g marinated artichoke hearts, drained and chopped
– 1 cup chickpeas, rinsed and drained
– 1/4 cup olive oil
– 2 tablespoons balsamic vinegar
– Salt and pepper to taste
Method
1. Start by preparing the vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and chop the red onion.
2. Combine all the chopped vegetables in a large mixing bowl. Add in the olives, artichoke hearts, and chickpeas.
3. In a separate small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.
4. Pour the dressing over the salad mixture. Toss everything together until it’s well coated.
5. Let the salad sit for a few minutes before serving. Enjoy this refreshing dish!
