Ingredients
– 500 g ash gourd, peeled and cubed
– 1 cup grated coconut
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 2-3 green chilies, slit
– 1 tbsp ginger, grated
– 3 cups water
– 1 tbsp oil
– Salt to taste
– Fresh coriander leaves, for garnish
Method
1. Begin by heating oil in a pan over medium heat. Add mustard seeds and cumin seeds. Wait until they start to splutter.
2. Next, toss in green chilies and ginger. Sauté them for a minute until they are fragrant.
3. Add the cubed ash gourd to the pan, followed by salt and water. Stir everything together.
4. Cover the pan and let the mixture simmer for about 15-20 minutes until the ash gourd is soft.
5. Once cooked, mix in the grated coconut and garnish with fresh coriander leaves before serving.
