Ingredients

– 300g pasta
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 red bell pepper, diced
– 1 can diced tomatoes (400g)
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– Fresh parsley for garnish

Method

1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
2. Heat olive oil in a large frying pan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
3. Stir in the minced garlic and diced red bell pepper. Cook for an additional 3-4 minutes until the pepper is tender.
4. Pour in the diced tomatoes and sprinkle in the dried oregano, salt, and black pepper. Stir well and let it simmer for about 10 minutes.
5. Mix the cooked pasta with the sauce. Serve hot and garnish with fresh parsley.
