Ingredients
– 500 g pasta
– 2 tablespoons olive oil
– 1 onion, chopped
– 3 garlic cloves, minced
– 400 g canned tomatoes
– 1 teaspoon paprika
– 1 teaspoon oregano
– 1 cup vegetable broth
– 200 g spinach, fresh
– 1 cup feta cheese, crumbled
Method
1. Cook the pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened.
3. Stir in garlic and cook for one more minute. Pour in the canned tomatoes, paprika, and oregano.
4. Add the vegetable broth and simmer for 5 minutes. Mix in the fresh spinach until wilted.
5. Combine the cooked pasta with the sauce and top with crumbled feta cheese before serving.
