Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 carrot, diced
– 1 celery stalk, diced
– 1 can (400 g) diced tomatoes
– 1 teaspoon dried oregano
– 1 cup orzo pasta
– 1.5 liters vegetable broth
– 1 cup spinach, chopped
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
3. Stir in the diced tomatoes and oregano. Let it simmer for another 2 minutes.
4. Pour in the vegetable broth and add the orzo pasta. Cook according to the pasta package instructions.
5. Once the orzo is tender, mix in the chopped spinach and cook until wilted, about 2 minutes.
