Ingredients

– 1 zucchini, diced
– 800g canned diced tomatoes
– 1 teaspoon dried basil
– 4 cups vegetable broth
– 1 cup orzo pasta
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic to the pot. Cook until the onion is soft, about 3 minutes.
3. Stir in the diced carrot and zucchini. Cook for an additional 5 minutes until they start to soften.
4. Pour in the canned tomatoes, dried basil, and vegetable broth. Bring the mixture to a boil.
5. Once boiling, add the orzo and let it simmer for 10 minutes. Season with salt and pepper before serving.
