Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 can (400 g) diced tomatoes
- 4 cups vegetable broth
- 1 cup orzo pasta
- 1 cup spinach, chopped
- Salt to taste
- Black pepper to taste
Method
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook for about 5 minutes until soft.
- Stir in the minced garlic and oregano, cooking for another minute.
- Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil.
- Add the orzo and spinach. Season with salt and pepper, then simmer for 10 minutes or until the pasta is tender.
