Ingredients
– 500 g frozen peas
– 2 tablespoons olive oil
– 1 small onion, chopped
– 2 garlic cloves, minced
– 200 ml vegetable stock
– 1 teaspoon fresh mint, chopped
– Salt, to taste
– Pepper, to taste
– Zest of 1 lemon
– 1 tablespoon lemon juice
Method
1. Heat olive oil in a saucepan over medium heat.
2. Add chopped onion and sauté for 5 minutes until soft.
3. Stir in minced garlic and cook for an additional minute.
4. Pour in vegetable stock and bring to a boil. Then add the frozen peas.
5. Cook for about 5 minutes. Blend until smooth, then mix in mint, salt, pepper, lemon zest, and lemon juice.
