Ingredients

– 1 cup chopped spinach

Method
1. Start by heating a large pot over medium heat.
2. Add the onion and garlic. Sauté until soft, about 4 minutes.
3. Stir in the cumin and coriander for 1 minute.
4. Mix in sweet potatoes, lentils, tomatoes, and broth. Bring to a boil, then reduce heat.
5. Simmer until lentils and sweet potatoes are tender. Add spinach and season with salt and pepper.
