Ingredients
– 4 large tortillas
– 1 cup cooked rice
– 1 cup black beans, rinsed
– 1 cup corn kernels
– 1 cup chopped bell peppers
– 1 teaspoon cumin
– 1 teaspoon chili powder
– 1 cup shredded cheese
– Vegetable oil for frying
– Salsa for serving
Method
1. Heat a large skillet over medium heat and add the bell peppers. Sauté them until they start to soften.
2. Mix in the cooked rice, black beans, corn, cumin, and chili powder. Stir everything together until warmed.
3. Place a tortilla on a flat surface and add a portion of the filling in the center. Sprinkle shredded cheese on top.
4. Fold the sides of the tortilla over the filling and roll it up tightly to make a burrito shape.
5. Fill a large pot with vegetable oil and heat it. Fry the chimichangas until golden brown. Serve them warm with salsa on the side.
