Ingredients
– 125 g unsalted butter, softened
– 1 cup sugar
– 1 large egg
– 1 tsp vanilla extract
– 2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp salt
– 1/4 cup whole milk
– 1/2 cup icing sugar
– 1-2 tbsp water
Method
1. Preheat the oven to 180°C and line a baking tray with baking paper.
2. In a mixing bowl, cream the softened butter and sugar until the mixture is light and fluffy.
3. Beat in the egg and vanilla extract until everything is well combined.
4. In another bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with milk.
5. Roll the dough into small balls and place them on the prepared tray. Flatten each ball slightly and bake for 10-12 minutes until lightly golden. Let them cool before icing.
