Ingredients
– 500 g taro root
– 2 tbsp oil
– 1 tsp mustard seeds
– 1 tsp turmeric powder
– 1 tsp red chili powder
– Salt to taste
– 2 tbsp fresh coriander, chopped
– 1 tsp lemon juice
– 1 tbsp ginger, grated
– 1 tbsp garlic, minced
Method
1. Begin by peeling the taro root and cutting it into bite-sized pieces.
2. Boil the diced taro until fork-tender, which should take around 15 minutes. Drain well.
3. Heat the oil in a large pan over medium heat. Add mustard seeds and wait until they pop.
4. Stir in turmeric, red chili powder, ginger, and garlic. Combine well for a minute.
5. Toss in the boiled taro, adding salt and lemon juice. Cook until crispy, and then sprinkle with fresh coriander.
