Ingredients
– 1 cup rye flour
– 1 cup milk
– 2 large eggs
– 1 tablespoon butter (melted)
– 1 teaspoon sugar
– 1/4 teaspoon salt
– Butter (for cooking)
– Filling of your choice (like cheese, jam, or spinach)
Method
1. In a bowl, mix rye flour and sugar together.
2. Add milk, eggs, and melted butter to the dry ingredients. Stir until smooth.
3. Heat a non-stick frying pan over medium heat and add a little butter to coat the bottom.
4. Pour about 1/4 cup of batter into the hot pan, swirling to form a thin layer. Cook for 1-2 minutes until the edges lift.
5. Flip the crepe and cook for another minute. Remove and repeat with remaining batter, adding your favorite filling before serving.
