Ingredients
– 4 medium sweet potatoes
– 2 tablespoons olive oil
– 1 tablespoon fresh rosemary, chopped
– 1 teaspoon garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 tablespoon honey
– 1 tablespoon lemon juice
– 1/4 cup water
Method
1. Preheat the oven to 220°C.
2. Peel the sweet potatoes and cut them into cubes.
3. Place the sweet potato cubes in a bowl and drizzle with olive oil.
4. Add rosemary, garlic powder, salt, pepper, honey, and lemon juice. Toss everything until the potatoes are well coated.
5. Spread the sweet potatoes on a baking tray and pour the water around them. Roast for 25-30 minutes until they are golden and tender.
