Ingredients
– 250 g digestive biscuits (about 2 cups crushed)
– 125 g unsalted butter (melted)
– 395 g sweetened condensed milk (1 can)
– 200 ml passionfruit pulp (fresh or canned)
– 2 teaspoons gelatin (optional)
– 50 g icing sugar (about ½ cup)
– 1 tablespoon lemon juice
– Shredded coconut (for topping)
– Extra passionfruit pulp (for garnish)
– Fresh mint leaves (for garnish)
Method
1. Start by crushing the digestive biscuits until they are fine crumbs.
2. Combine the biscuit crumbs with melted butter in a mixing bowl. Press the mixture into the base of a lined 20 cm square baking dish.
3. Whisk together the sweetened condensed milk, passionfruit pulp, gelatin (if using), icing sugar, and lemon juice in a separate bowl. Mix until smooth.
4. Pour the filling over the biscuit base evenly. Chill in the refrigerator for about 2 hours until set.
5. Once set, cut into slices and garnish with shredded coconut, extra passionfruit pulp, and fresh mint leaves.
