Ingredients
– 300 g pasta
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 (400 g) can diced tomatoes
– 240 ml vegetable broth
– 240 ml cream
– 1 teaspoon Italian herbs
– Salt and pepper to taste
– Fresh basil for garnish
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until soft.
3. Stir in the diced tomatoes, vegetable broth, cream, and Italian herbs. Bring to a simmer.
4. Add the pasta to the pot and cook for about 10-12 minutes until the pasta is tender.
5. Season with salt and pepper. Serve hot and garnish with fresh basil.
