Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon paprika
– 4 chicken thighs
– 400 ml chicken broth
– 1 cup couscous
– 1 cup frozen peas
Method
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic. Cook for about 5 minutes until onion softens.
3. Stir in cumin, coriander, and paprika. Cook for another minute.
4. Place chicken thighs into the pot and pour in the chicken broth. Bring to a boil.
5. Reduce heat, cover, and simmer for 25 minutes. Add couscous and peas, then cook for an additional 5 minutes.
