Ingredients
– 1 cup basmati rice
– 2 cups water
– 1 orange (for juice and zest)
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 onion (finely chopped)
– 1 teaspoon ginger-garlic paste
– 1/4 cup mixed vegetables (like peas and carrots)
– Salt to taste
Method
1. Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
2. Heat oil in a pot over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
3. Stir in the chopped onion and sauté until it becomes golden brown. Add ginger-garlic paste and mix for one minute.
4. Incorporate the rice and mixed vegetables, cooking for 2 minutes. Pour in water, orange juice, and zest. Season with salt.
5. Bring to a boil, then reduce to low heat. Cover the pot and let it cook for 15 minutes, then fluff the rice with a fork before serving.
