Delicious Mangalorean Ambe Upkari: Ripe Mango Curry Recipe

Ingredients

– 2 ripe mangoes, peeled and diced
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal
– 1/4 teaspoon turmeric powder
– 1-2 green chilies, slit
– 10-12 curry leaves
– Salt to taste
– 1 tablespoon jaggery (or brown sugar)
– 1/4 cup water

Method

1. Heat oil in a pan over medium heat. Add mustard seeds and wait for them to start popping.
2. Stir in urad dal and fry it until golden brown. Add green chilies and curry leaves. Sauté for a minute.
3. Next, add the diced mangoes and turmeric powder. Mix well and cook for about 2-3 minutes.
4. Pour in water and add salt along with jaggery. Stir everything together and let it simmer for 5 minutes.
5. After the mangoes are soft, remove the pan from heat. Serve with rice or enjoy as a side dish.
