Ingredients
- 1 tablespoon olive oil
- 200 g mushrooms, sliced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 can black beans (400 g), rinsed
- 8 corn tortillas
- 1 avocado, diced
- ½ cup fresh salsa
- Fresh cilantro, chopped (to taste)
- Lime wedges (for serving)
Method
- Heat olive oil in a large pan over medium heat.
- Add sliced mushrooms and cook until tender, about 5 minutes.
- Stir in cumin and paprika; cook for another minute.
- Mash ½ of the black beans in a bowl and mix them with the remaining beans.
- Warm the tortillas in a dry pan, then fill each with mushroom mix, mashed beans, avocado, and salsa. Top with cilantro and serve with lime wedges.
