Ingredients

– 1 cup (240 ml) unsulfured molasses
– 1 cup (200 g) brown sugar
– 1 cup (227 g) butter, softened
– 2 large eggs
– 4 cups (500 g) all-purpose flour
– 2 teaspoons baking soda
– 1 teaspoon ground ginger
– 1 teaspoon ground cinnamon
– 1/2 teaspoon salt
– 1 teaspoon vanilla extract

Method

1. Preheat the oven to 175°C (350°F) and line baking trays with baking paper.
2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
3. Add the molasses, eggs, and vanilla extract. Mix until everything is well combined.
4. In a separate bowl, combine flour, baking soda, ginger, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients. Stir until a dough forms.
5. Drop spoonfuls of dough onto the prepared baking trays and bake for 8-10 minutes, or until the edges are firm.
