Ingredients
– 250 g chicken breast, cooked and shredded
– 2 cups corn chips
– 1 cup canned black beans, drained and rinsed
– 1 cup diced tomatoes
– 1 cup grated cheese
– 1/2 cup sliced jalapeños
– 1/2 cup sour cream
– 1/4 cup chopped fresh coriander
– 1 avocado, diced
– 1 teaspoon olive oil
Method
1. Preheat your oven to 180°C.
2. Spread corn chips evenly onto a baking tray.
3. Combine shredded chicken, black beans, and diced tomatoes in a bowl.
4. Spoon the chicken mixture over the chips and top with jalapeños and grated cheese.
5. Bake in the oven for about 10 minutes, or until the cheese is melted. Serve hot with sour cream, avocado, and coriander on top.
