Delicious Karwar Valval: Mixed Vegetables In Coconut Milk Recipe

Ingredients
1 cup of mixed vegetables (carrots, beans, and peas)
1 medium potato, diced
1 medium onion, chopped
2-3 green chillies, slit
1 cup of coconut milk
2 tablespoons of oil
1 teaspoon of mustard seeds
1 teaspoon of cumin seeds
Salt, to taste
Fresh coriander leaves, for garnish

Method
Heat oil in a pot over medium flame.
Add mustard seeds and cumin seeds once the oil is hot.
When they start popping, mix in the chopped onion and green chillies.
Sauté until the onion is soft. Then, add the diced potato and mixed vegetables.
Pour in coconut milk and simmer for about 10-15 minutes. Season with salt.
