Ingredients
– 2 cups rolled oats
– 1 cup nuts (like almonds or walnuts)
– ½ cup seeds (such as pumpkin or sunflower)
– ½ cup honey or maple syrup
– ¼ cup instant coffee
– ½ teaspoon cinnamon
– ¼ teaspoon salt
– ½ cup dried fruit (like cranberries or raisins)
– ½ cup chocolate chips (optional)
– 2 tablespoons vegetable oil
Method
1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a large bowl, mix together oats, nuts, seeds, instant coffee, cinnamon, and salt.
3. Pour in honey and vegetable oil, then stir everything until it’s evenly coated.
4. Spread the mixture evenly on the prepared baking tray. Bake for 20 to 25 minutes, stirring halfway through, until golden brown.
5. Once out of the oven, let it cool. Add dried fruit and chocolate chips if you like. Store in an airtight container.
