Ingredients
– 1 cup warm water (about 240 ml)
– 1 packet active dry yeast
– 1 tablespoon sugar
– 3 cups all-purpose flour
– 1 teaspoon salt
– 2 tablespoons baking soda
– ½ cup blue cheese, crumbled
– 1 egg, beaten
– Coarse sea salt for sprinkling
– 1 tablespoon olive oil
Method
1. Mix the warm water, yeast, and sugar in a bowl. Wait for about 5 minutes until it becomes frothy.
2. Add the flour and salt to the yeast mixture. Stir everything together until a dough forms.
3. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place it in a bowl oiled with olive oil. Cover with a cloth and let rise for 1 hour.
4. Preheat the oven to 220°C. Roll the dough into small balls and then shape them into pretzels.
5. Boil water in a pot, then add baking soda. Drop the pretzels in for about 30 seconds. Remove them, place on a baking tray, brush with egg, and sprinkle with coarse salt. Bake for 12-15 minutes or until golden.
