Method
1. Start by cooking the quinoa. In a pot, combine the quinoa and water. Bring it to a boil, then reduce the heat and let it simmer for 15 minutes.
2. While the quinoa cooks, cut the chicken breast into cubes. Heat the olive oil in a skillet over medium heat. Add chicken and cook until it turns golden brown and is fully cooked, about 7-10 minutes.
3. Season the chicken with garlic powder, salt, and pepper. Stir well and let it cook for an extra minute.
4. Once the quinoa is done, fluff it with a fork. Mix in the diced bell pepper, corn, and avocado.
5. Finally, combine the chicken with the quinoa mixture. Serve warm and enjoy your protein-packed meal.
