Ingredients
2 large ripe avocados
1 medium tomato, diced
1 small red onion, chopped
1 lime, juiced
1/2 tsp salt
4 large flour tortillas
1 cup shredded cheese
1/4 cup mayonnaise
1/4 cup fresh mint, chopped
1/4 tsp black pepper
Method
Start by cutting the avocados in half, then remove the pit and scoop out the flesh.
Mash the avocado in a bowl until smooth.
Mix in the diced tomato, chopped onion, lime juice, and salt.
Spread some avocado mix on a tortilla, sprinkle cheese on top, and then fold it in half.
Cook the quesadilla in a hot pan until it’s golden brown on both sides. Meanwhile, combine mayonnaise, chopped mint and pepper in a small bowl to create the mint mayo.
