Ingredients

– 1 cup almond flour
– 1/2 cup coconut flour
– 1/2 teaspoon baking soda
– 1/2 teaspoon cinnamon
– 1/4 teaspoon salt
– 1/2 cup maple syrup
– 1/4 cup coconut oil, melted
– 1 teaspoon vanilla extract
– 1 tablespoon sugar (for rolling)
– 1 teaspoon cinnamon (for rolling)

Method

1. Preheat your oven to 180°C and line a baking tray with parchment paper.
2. In a large bowl, mix together the almond flour, coconut flour, baking soda, cinnamon, and salt.
3. Pour the maple syrup, melted coconut oil, and vanilla extract into the dry ingredients. Stir until combined.
4. In a separate small bowl, mix the sugar and extra cinnamon for rolling.
5. Scoop the dough into balls, roll them in the cinnamon sugar, and place on the baking tray. Bake for 10-12 minutes until lightly browned.
