Ingredients
– 1 kg potatoes
– 4 cloves garlic
– 60 ml olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1 tsp dried rosemary
– 1 tsp dried thyme
– Fresh parsley for garnish
Method
1. Preheat your oven to 220 degrees Celsius.
2. Wash and cut the potatoes into even-sized pieces.
3. In a large bowl, mix the olive oil, minced garlic, salt, pepper, rosemary, and thyme.
4. Add the potatoes to the bowl and toss everything together until they are well coated.
5. Spread the potatoes on a baking tray and roast for 30-35 minutes or until golden brown, stirring halfway through.
