Ingredients
- 4 chicken thighs
- 2 cups sliced onions

Method
- Preheat the oven to 190 degrees Celsius.
- In a large skillet, heat olive oil over medium heat and add the sliced onions. Cook until the onions are caramelized, about 10 minutes.
- Add garlic, thyme, salt, and pepper to the pan, and stir for about 1 minute.
- Place chicken thighs in a baking dish. Pour the onion mixture over the chicken. Add chicken broth and balsamic vinegar on top.
- Bake covered for 25 minutes. Remove the cover, add grated cheese, and bake for an additional 10 minutes until the chicken is cooked through.
