Delicious Finger Millet Fruit-Filled Crepes: Healthy Ragi Rolls

Ingredients

– 1 cup finger millet flour
– 1 cup milk
– 2 tablespoons jaggery or brown sugar
– 1/4 teaspoon salt
– 1/4 teaspoon baking powder
– 2 tablespoons melted butter
– 1/2 cup mixed fruits (like banana, apple, or berries)
– 1/4 cup yogurt
– 1/2 teaspoon vanilla extract
– 2 tablespoons chopped nuts (optional)

Method

1. Begin by mixing finger millet flour, milk, jaggery, salt, and baking powder in a bowl until you achieve a smooth batter.
2. Heat a non-stick pan over medium heat and add a little melted butter. Pour a ladleful of the batter into the pan and spread it into a thin circle.
3. Cook each crepe for about 2-3 minutes until the edges lift. Flip and cook for another minute. Remove and keep warm.
4. Prepare the filling by combining mixed fruits, yogurt, vanilla extract, and nuts in a separate bowl.
5. Place some of the fruit mixture in the center of each crepe. Roll it up and enjoy!
