Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 2 carrots, diced
– 2 sticks celery, diced
– 2 garlic cloves, minced
– 1 teaspoon Italian seasoning
– 1 can (400g) diced tomatoes
– 1 litre vegetable broth
– 250g tortellini (fresh or frozen)
– 1 cup cream
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery. Cook until the vegetables are soft.
3. Stir in garlic and Italian seasoning. Sauté until fragrant for about 1 minute.
4. Pour in the diced tomatoes and vegetable broth. Bring to a boil.
5. Add tortellini and cook according to package instructions. Stir in the cream before serving.
