Delicious Chicken Enchilada Soup Recipe For Quick Weeknight Meals

Ingredients

– 2 cups cooked chicken, shredded
– 1 tablespoon olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 2 cups vegetable broth
– 1 can diced tomatoes (400g)
– 1 can black beans (400g), drained and rinsed
– 1 tablespoon taco seasoning
– 1 cup corn, frozen or canned
– 1 cup shredded cheese

Method

1. Heat olive oil in a large pot over medium heat. Add onion and sauté for about 5 minutes until soft.
2. Stir in minced garlic and cook for another minute until fragrant.
3. Pour in the vegetable broth, diced tomatoes, black beans, and taco seasoning. Mix well and bring to a boil.
4. Add cooked chicken and corn. Lower the heat and let it simmer for about 15 minutes, stirring occasionally.
5. Serve the soup hot, topped with shredded cheese.
