Ingredients
– 400 g broccoli
– 200 g feta cheese
– 1 cup cherry tomatoes
– ½ cup red onion
– ¼ cup sunflower seeds
– 1 cup cooked quinoa
– 2 tbsp olive oil
– 2 tbsp lemon juice
– Salt to taste
– Pepper to taste
Method
1. Start by cooking the quinoa according to package directions. When done, let it cool.
2. Chop the broccoli into small florets, then steam them for around 3 minutes until tender. Drain and cool.
3. Cut the cherry tomatoes in half and thinly slice the red onion.
4. In a large bowl, combine the cooled quinoa, broccoli, tomatoes, onion, and sunflower seeds.
5. Crumble the feta cheese on top. Drizzle with olive oil and lemon juice. Season with salt and pepper, then mix gently.
