Ingredients
– 1 kg potatoes
– 50 ml olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 2 tbsp fresh rosemary, chopped
– 2 cloves garlic, minced
– 1/4 cup grated Parmesan cheese
– 1/4 cup fresh parsley, chopped
– Lemon wedges, for serving
Method
1. Preheat the oven to 200°C. Line a baking tray with parchment paper.
2. Peel and chop the potatoes into small cubes. Place them in a large bowl.
3. Add olive oil, salt, black pepper, rosemary, and garlic to the potatoes. Mix everything well to coat the potatoes evenly.
4. Spread the potatoes out on the baking tray in a single layer. Roast for about 25-30 minutes until golden brown and crispy.
5. When finished, sprinkle with Parmesan cheese and parsley. Serve with lemon wedges on the side.
