1 cup black quinoa
1 cup brown rice
1 ½ cups water
1 cup diced apple
1 cup diced pear
½ cup walnuts, chopped
½ cup dried cranberries
¼ cup olive oil
2 tablespoons lemon juice
Salt to taste
Method
Begin by rinsing the black quinoa in cold water.
Combine water, quinoa, and rice in a pot and bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Once cooked, let it cool and then mix in diced apple, pear, walnuts, and cranberries.
Dress the salad with olive oil, lemon juice, and add salt according to taste.
