Ingredients
– 2 cups of sushi rice
– 2 ½ cups of water
– 1 cup of rice vinegar
– ½ cup of sugar
– 1 teaspoon of salt
– 1 cucumber
– 2 avocados
– 200g of cooked shrimp
– 4 sheets of nori
– Soy sauce for serving
Method
1. Rinse the sushi rice in cold water until the water runs clear. Drain it well.
2. Combine rinsed rice and water in a pot. Bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes or until the rice is tender.
3. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the warm rice and allow it to cool.
4. Slice the cucumber and avocados into thin strips. Prepare the shrimp if not cooked already.
5. Lay a sheet of nori on a bamboo mat. Spread a thin layer of rice on top, leaving space at the edges. Add cucumber, avocado, and shrimp. Roll it tightly and cut into pieces. Serve with soy sauce.
