Ingredients
– 3 medium plantains, peeled and sliced
– 1 large tomato, chopped
– 1 large onion, sliced
– 2 green chilies, slit
– 2 tablespoons vegetable oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1/2 teaspoon turmeric powder
– Salt, to taste
– 1/4 cup water
Method
1. Heat the oil in a large pan over medium heat.
2. Add mustard seeds and cumin seeds. Wait for them to crackle.
3. Toss in the sliced onions and green chilies. Sauté until the onions turn golden brown.
4. Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften.
5. Add the plantain slices and water. Stir well and cover the pan. Cook until the plantains are tender, about 10-15 minutes.
